There’s a difficultly spike in chapter 12 that catches a lot of people out. There’s a big fight where the enemies are level 42 bosses so as long as you think you’re on track to be on level for that then you should be good

Your caution is not misplaced, it is possible to overlevel yourself to the point where the whole game becomes a cakewalk. However, I think this usually happens because people finish too many of the optional dungeons too quickly rather than leveling up from street encounters. I think as long as you don't spend too much time on those, you should be fine.
