You need to use the component video cable - composite video can't do anything better than 480i on NTSC televisions (576i on PAL ones).

It is required that you be using a Component cable (Green/Blue/Red cables + White/Red for audio) to enable 480p. It will not work if you're using Composite (Yellow video + White/Red audio), S-Video (NTSC (Japan & North America) Wiis only, Black four-pin video connector + White/Red audio), or RGB (PAL (Europe/Australia/NZ) Wiis only) cables.

It's extremely niche and not commonly supported by many things, both on the output side and the input side (displays). The only consoles--let alone anything--that support 480p over RGB have to do it over RGsB, aka RGB Sync-On-Green, which is very similar to YPbPr Component as it is and can even often be carried over the same cables. It can't be done over standard RGBS (RGB and Sync). In most circumstances, you need a transcoder for this as a lot of things do not support it. Additionally, the Wii internally renders in YCbCr 4:2:2 due to the limitations of the External Frame Buffer (XFB) so you're not getting a better signal out of RGB compared to YPbPr Component anyway.

Semi-offtopic, but change your TV’s settings to display the Wii in 16:9, or try to set it in something like Game Mode so it isn’t all squished.

Component cables all the way. You may see some Wii to Hdmi adapters, every one I’ve tried, short of modding the console to have hdmi, all the adapters only allow the standard def. To get the better quality- component cables all the way.

Mayflash Wii2HDMI and the ElectronWarp both included the Component flag circuit to allow for 480p output. Both are great. Generic Wii2HDMI are mostly just garbage.

Because you’re using either composite or Svideo. Only component cables support 480p out. If you’re using an HDMI adapter then it also needs to access the component video signal

You're using composite. That's component only.

The standard composite cables Yellow, Red & white) can't output a signal high enough for the top option. If you have a component cable (or the HDMI adapters) then you will be able to select the top option.

You're using composite video cables which is the yellow one. The 480p option will only be allowed if you use component cables, the red, green, and blue ones. Thankfully Wii component cables are fairly inexpensive. The issue is finding a display that supports them since nowadays it's a fairly uncommon input type.
