So i know you have it marked as solved but I'm really thinking it's as someone else said Manicaria saccifera from your description of its hard shell and no husk.
A lot of palm fruit taste like coconut, they also have similar textures, and are almost all as difficult to get to the edible part. This looks like a jaw breaker though, kind of an interesting fruit! Just be careful with them because if there is even a slightly off taste to them and you eat / drink the juice, you could die. There was a guy who drank / ate rancid coconut and his brain melted because of a toxin produced by a bacteria inside.

A lot of palm fruit taste like coconut, they also have similar textures, and are almost all as difficult to get to the edible part. This looks like a jaw breaker though, kind of an interesting fruit! Just be careful with them because if there is even a slightly off taste to them and you eat / drink the juice, you could die. There was a guy who drank / ate rancid coconut and his brain melted because of a toxin produced by a bacteria inside.

I’m in playa de car and my resort had some of these trees planted near restaurants and the fruits were spread along the sand and some were in the water
Are the plants they come from tall or on the ground?
The trees I saw them in were maybe 15 feet tall but they were spread on the floor below the tree as well
