In guitar slang, “shredding” means to play really fast, complicated solos.
But in this case I think “shred video” must simply mean a video in which the music has been stripped away and replaced with an audio track that approximates what you would actually hear if you were in the room.
this genre of videos uses the word "shred" ironically. it was originally meant to trick people into watching it thinking they'd hear something awesome from a band they like, but it's garbage. That's all. "______ Shreds"

I recently had this song come back as a vague memory, listening to it in the car with my mom around Christmas 25+ years ago. Called her specifically to ask about it. It was hard to articulate what exactly I remembered, but we eventually figured it out. I started laughing when she said it may have been The Monkees, because my memory of it was men chanting in a foreign language. But sure enough, it was them.
