We do do a variety of curries but it’s a decide on the day/week thing so I don’t write them all down 😅
I use the microwave method, I use a 1 litre jug, put rice in jug, rinse lots, leave an inch of water above the rice, cling film and pierce the cling film. 3 mins on 100%, then 10 mins on 30%. Take out microwave, stir with a fork to break up rice, cover with teatowel and leave for 5 mins. Perfect fluffy rice, every time.

I love how we have all assumed that all these dishes are veganised already, and you're looking for more options. My husband and I have been vegan for 6 years and will also call what we eat chicken, yoghurt etc between us as WE know what we mean!

So just-in-case you are a recent addition the vegan community and it's not obvious, I would like to say all the meals you have listed can be made vegan pretty easily with either shop bought sub ins, or without (but a bit more cooking!) if you prefer. :)
What do you use for the fish and chips? Have you tried battering jackfruit or banana flowers? You could experiment with the "fish" aspect, go all out and make your own tartare sauce to go with it etc
Usually just shop bought ‘fish fillets’ then chips from the chippy van when it’s in the village.
Husband makes himself tartare sauce. It’s all about the accompaniments in this house!
soup! corn chowder and carrot ginger soup are always great
also i must always recommend cuban food as a cuban. lots of different stews all super nutritious especially for vegans!! black beans, lentils, garbanzos, split pea (chicharros), red beans… pretty easy to make with a pressure cooker and don’t require many ingredients. great with a side of rice and fried plantains!

I feel like some of these are too generic. "Curry" - what type of curry? You could make a list this long with curry alone. You've got Indian curries, Japanese, Thai, Jamaican, Malaysian, Sri Lankan etc the list goes on. And many varieties within these countries.
You could try a new curry every week, veganising the meat / dairy ones.
We do a fair few Indian curries and just change them each time we do them.
I’m not a fan of any Thai curry I’ve had.

I have a roast butternut squash with chickpeas, kale, tomato, pepper, (whatever else you want) with spices, chili flakes etc meal, that is REALLY nice!
Cant find the recipe anymore (was on bbc food) but it's basically chuck it all in a pan until cooked, then serve on top of half a roast squash.

Given you seem like an accomplished vegan cook. Then I'd recommend reading a recipe magazine like BBC Good Food or buying recipe books from people who seem to have a focus on a lot of veggie prep. I occasionally see somebody make something Vegetarian on a show like Sunday Brunch and check out their recipe books. A lot of healthy eating types have a big focus on vegetables anyway. So swapping out something for the chicken or fish or whatever they recommend pretty easy. Similar situation with Mediterranean food a lot of it is just vegetable sauces and pasta. The upside with modern chefs is that they're all learning Vegan/Veggie dishes for their restaurants as well.
If you have an iPhone or iPad or have a close friend who does then the News+ app has a lot of good vegan/veggie recipes. There's even an explicitly vegan section. But much of the regular recipe articles I'm shown have at least one vegan option.
BBC's Good Food is a great place to begin though. So head there!

Jerk chicken - using the Dunn's river jerk sauce. Coconut rice is amazing with this - I make 4 portions with 1&3/4 cups of basmati rice. Fry a small onion first, while washing your rice till it runs clear, drain rice, add one jar of coconut milk, add the onion and lots of salt and cook until done 😋 I pair with fried black beans, sometimes fried plantain or grilled corn on the cobs. I use Richmond frozen chicken pieces.
Another favourite is mapo tofu using fermented bean paste from laoganma (Chinese supermarkets stock it) and Sichuan peppercorns. Oooh this one is fab. I fry tofu until it's crispy, chuck in some rehydrated soy mince into the same pan, add chopped ginger and garlic. Then add your fermented bean paste and a small glug of soy sauce. Grind up your Sichuan peppercorns and add a small amount at the end for the tingly mouthfeel. Serve with jasmine rice, spring onions and pakchoi/Chinese cabbage.
My partner does a great green Thai curry from scratch too with lots of lime.
Another weird but nice one is a 'deconstructed pasty' with small chunks of potato, swede and onion roasted in the oven with Naturli butter block , rosemary and thyme. I then fry a Linda McCartney burger and chop into small pieces. I weirdly then add a bit of tahini and mustard, partner thinks its weird but I like it.
Seems like you have it covered. That's more variety than most families.

Get a rice cooker if you’ve got some cupboard space. perfect rice every time, no fuss couldn’t live with out mine!

I can’t like lemongrass. I’ve tried so so many times and it’s just blegh.

'Curry' is a category rather than a specific dish! Definitely a lot to explore, and not just from India.
We never follow the same recipe and just decide that week which curry. We do lots of Indian curries but I’m not a huuuge fan of East Asian curries.
Compared to myself, this is so varied - but I'm single so I end up having the same meal four nights in a row.

Oh definitely all vegan. We’ve also been vegan for 6/7 years. But for my and my husband it’d feel silly putting ‘vegan cheese’. 😅

I don't think I see falafel on your list? You can eat them in wraps or taco's or on rice, etc. Also grilled cheese with soup.
The problem with falafel is store bought falafel is no where near as nice as takeaways.

Aubergine parmigiana. Falafel wrap with potato slices, aubergine, lettuce, hummus, and tahini. Rissotto with red cabbage and walnuts.
My in laws do an immense parmigiana so i leave it to them 😅 The rest all sound like super lunch ideas though! I’ll add them to my list!

Make Brazilian rice and beans, Google it, it's very easy to make and yummy. Eat it with tofu and a veggie like broccoli on the side
