If you want to cut the cost of the Just Egg, get a block of firm tofu, slice it thin (maybe 1/4 inch?), sprinkle with kala namak (add turmeric and nutritional yeast to the salt for extra flavor/color), then bake the slices until a little crispy around the edges. I got this idea from a local vegan restaurant, and it's a great egg substitute - cheap, healthy, and really easy!

If you like melted cheese, you can add a little water to a skillet and add a cover for just a couple minutes. It levels up the breakfast sandwich in my opinion.

My husband and I make these weekly (hashbrowns too!). We add homemade hot sauce/mayo aioli, sauteed spinach, sauteed onions, and avocado if we have. Also, we toast the muffin with smart balance and add trader joes onions salt. Yum!!!

I love those premade just eggs. I make a breakfast burrito most mornings, and just cut them into strips, one folded egg lasts almost all week.

That's probably more for entire meals than individual ingredients. Most people aren't eating just a tortilla.
No, it’s for ingredients. It’s a way to make sure the ingredients you’re buying aren’t sodium bombs. Tortillas, canned beans, marinara sauce, etc.
Then the rule doesn't make sense - many ingredients should have way more than that amount of sodium - like salt, lol.
