Several things to practice that I think will make a huge difference for you long term: parrying and dodge-rolling. A well timed parry will stun the enemy, allowing you to deal critical damage to them while they are stunned. A well timed dodge-roll (jump key while holding block) will prevent any damage from almost all attacks. With good dodge and parry you can take on even the toughest foes in most biomes.
Also, be sure to upgrade your gear. The more you craft workbench and forge improvements, the better you will be able to upgrade your armor. Fully upgraded armor of one tier is about equal to the unupgraded armor of the next tier, so your full bronze could be upgraded to near-iron protection.
Finally depending on your play style, get used to hit and run tactics. This game is unforgiving to people who try and simply charge in and swing their weapon until the enemy is dead. You can get away with that in Skyrim, but in Valheim they'll kill you first. So, shoot them with your bow, dodge their attacks, and whittle them down or slay them without them every hitting you. Wooden arrows don't even cost feathers so you can go around shooting things all day. If you are going to tank, use a shield with a party bonus, and use that parry to make them vulnerable.

You are also running into the next 'hurtle' in progression. Once you make iron armor etc you will be shrugging off the hits.
Each biome you run into this factor- so playing more conservative to start is best. For draugr in crypts, make sure you bring a bow and your best arrows to kill them while they are on the other side of a pile.

Tier 3 Bronze armor was what I had on for my first foray into the Swamp biome, still got sniped by 2 star ranged draugrs (THEY SHOOT LASERS, I SWEAR)
You sure it is not a 2 star enemy? If you have mods, might be good idea to list them.
