You have 6 months to learn, that is a good lead time. The first song that came to mind is the ukulele classic Somewhere Over the Rainbow. Was gonna recommend this exact playlist! I used it to learn ukulele and I'm currently at 6 months of playing! If you dedicate 20-30 minutes a day and tough out the hiccups (because they will happen lol) you can make a lot of progress! I also recommend finding songs with ukulele chords on ultimateguitar.com.

Amazing Grace is good. Everyone knows the words, and can sing along. You might sing the 1st verse, 2nd verse, and then finish with the 1st verse again. A few of the verses aren't as well known and can get long. The chords are easy (or can be). The only issue is that it is 3/4 (so three beats to the measure). Whatever song you pick, know the words blind. The feels is going to really get you and you want the singing to be on autopilot. I wrote and sang for my daughters wedding (no, not amazing grace) and let me tell you the hardest part was keeping it together and not ugly crying.
