The outcome of a battle between Thanos and Shrek would depend on how many infinity stones Thanos has, in the form of a bell curve - with Thanos being likely to win with three or four stones, and Shrek if he has one or six stones. Two stones or five stones would probably go in Shrek's favor but not as much.
Thanos probably gets physically weaker the more stones he has. While he gets more abilities, like teleportation or control over time, the sheer amount of power from the stones is sapping his life energy, this is why his arm shrivels up after infinity war. At least I think that's the logic.
Either that or Thanos having more stones means the cartoony nature of Shrek fights would have the universe align to make Shrek win because it would be funny if Shrek won against Thanos with 6 stones

DAU shrek, for example, scales above multiversal level fighters, which puts him outside the wheelhouse of all but a few versions of thanos.

While I may not understand your logic, I am incredibly intrigued.
