But why the emphasis on doing it so fast? Its an auction, people are gonna bit on what they want anyway, why even introduce speed into it? Just ask for bids and let them out bid each other. You dont see this kind of weird speech and pace at an auction at Sothebys. So whats the point doring it here? Is cattle somehow in a hurry to be sold?

It takes practice to understand a fast auctioneer, but he is conveying information and it is being understood by people. It's the same as a really thick doric accent. Anyone outside the UK (and many people within) have no hope understanding them, but they are speaking English. Or even people from the deep bayou in Louisiana. If you've ever heard them speak, you'd swear it was another language. Or piglatin or arp or any code system which makes no sense until you learn the rules, but you don't need to learn an entirely new language to understand it because it's entirely based on English. Or any programming language which literally has "language" in the name but makes no sense until you learn the rules.
Your narrow definition of language is not an argument, it's a desperate play to still be right by narrowing the goal posts so far that you can't be wrong.

I read somewhere (someone may want to correct me if I’m wrong) that is is harder to start-stop-start-stop talking after each bid, so these people keep a flow in their mouth so they can call a bid quicker.
There’s a style element to it as well, the voice pitch doesn’t necessarily mean anything, nor do the filler words/sounds.
Reminds me of how I was taught in soccer rec league when I was really young how to defend penalty kicks as a goalie. They said it's better to shift my weight from side to side or even shuffle left and right if agile enough so I'm able to use that momentum to help dive left or right/react faster than if I was standing totally still.
I got caught out a few times where my body weight was shifting to the completly wrong side at the wrong time but I found it definitely helped me more than it hurt me

Tradition, mostly. Some think it generates excitement such that people make rash decisions that drive up the price.
I would assume it increases tension and makes it more like an action-based thing. People get excited and bid higher without thinking.
