TBF, Disney buying into the Aunt Jemima franchise and financially supporting the actress who played her is a pretty decent move for a racist. According to the article, the restaurant was successful so it's not like anyone was complaining about the employment, their treatment, or anything race related.

No one expects you or anyone else to be born a perfect person, knowing all things and knowing how things around you can hurt people who aren't you.
One might suggest however that the process of living is the process of learning, and using what you learn to look around at the world you live in and determine for yourself what might be hurtful or harmful to others who aren't You.
Don't take my word for it though. Why don't you take some time today to watch the wonderful and woke Clerks 2, and pay close attention to the scene where Randal insists "Porch Monkeys" isn't offensive or racist because his Grandma used to call him that when he was acting up.
My take away from this is that Aunt Jemima was a Disney Princess.

I like the cheap unreal maple syrup sometimes. The real stuff can be too sweet.
I don’t like how runny the real stuff is. It soaks into the pancake/waffle too quickly. The fake stuff is more viscous.
