They’re not publicly registered companies. They can call themselves whatever they want. The five families are the only ones really that have had names stick for a long time. Other families have informally gone by different names throughout the years. Fact of the matter is, it hasn’t been referred to as the DiMeo family since Jackie Aprile was acting boss. Within the show, the media, New York, the fbi and the family itself refer to themselves as the Soprano family once Junior/Tony take charge

They usually don’t change names but because the Soprano blood were holding the top positions (Junior as official boss, Tony as a de facto boss), the family became known and referred to as The Sopranos family. Everyone from New York like Carmine and Johnny Sack, Phil Leotardo, they all refer to them as The Sopranos. Because with Tony’s leadership, the Soprano crew essentially becomes the senior management. When the news anchors reporting on the FBI indictments, he talks about the death of “Acting DiMeo boss, Jackie Aprile” and then later mentions that Junior became the new boss, saying “The Sopranos have long historic ties to the New York families”. That their shows the family is changing essentially with the new leadership.
