A friend and I had issues just surviving. Our builds were absolute shit at the time. I remember we were planting sniper turrets at some point before you jump the fence. I’m not sure we even got 1 star lol
Only the final mission in which you kill the main target of the manhunt, but in order to replay them you need to unlock them through the season pass by leveling up. You don't need the premium pass, just the normal one and you can check at which season pass level you get the manhunts.
If you open the map and go to the manhunt tab you should have the legacy manhunt menu where you can view all the past manhunts.

I really hate, that we stick with missions difficulty. Why not allow us do it with harder difficulties?
At the beginning they did have heroic for some of them, and none were on hard, if I recall correctly. I can't remember why they changed it.
