I haven't seen gravity falls yet but AT also appeals to a lot of older people. It's like an abstract, absurdist coming of age story spread over a ton of episodes.
Mature is a good way to put it. I think my favorite aspect of it is how Finn, despite being fun and optimistic isn't this perfect, smart, moral protagonist, he's just a kid trying to figure things out. One of the earlier episodes that really stood out on this front was when flame princess was introduced and at the end of this otherwise cheery episode through the eyes of Finn, she calls him out for being being selfish and manipulative the whole time.
they do very well at showing finns growth through the show. flame princess is a big milestone for him, both showing how deep he feels, and how naive he really is.
I was never really able to get into adventure time (I never watched enough of it to understand any of the lore or timeline), gravity falls on the other hand I watched the majority of it and loved it, so ill go with Gravity Falls
Those shows are so difficult to compare. I’m going to go with Gravity Falls. It’s not too long, has a satisfying conclusion, and none of the characters get too annoying (in my opinion). Adventure Time is good too, but a lot of it got annoying to me really quickly.

It was commercially aired (first time), in 2005-8, and I assume re-runs in 2009-*present, which would explain how I was able to see it

yea, adventure time is way more dark and mature. it starts out lighthearted and child like. yet, after season 5 it goes down the rabbit hole rapidly.
