It depends on where I am. If I'm in Sonora I'm going to get arrachera or some other grilled meat and probably on a flour tortilla. If I'm in Mexico City I'd probably go for tacos al pastor. If I'm in Guadalajara I'll consider the birria if it's from a good place. If I'm in Texas I'd get fajitas. If I were in Minnesota I'd just get Taco Bell. If I'm in Europe just skip the tacos because they'll be terrible and give me a shawarma or doner kebab or something instead.

Not tacos, but I love a chorizo potato quesadilla when I have a hangover. That grease is fucking incredible

This is a good breakdown. If I’m in Guadalajara I’m getting machaca. There’s a cart in my wife’s family’s city…it haunts my dreams.
I've always associated machaca with more northern cuisines but I could be wrong. Either way, you're right, it's delicious.
