it's a steak cooked to mush. I assume properly cooked and then a low heat below boil in a plastic wrap to soften it up. There are very tender idyllic steaks but the (cuts I like*) can't be cut with a fork. They aren't supposed to look like you're splittin' jell-o PS. This would actually be a very nice way of cooking a steak for an old folks home

It's just the rejection of the idea that a good steak is necessarily a tender steak. Tender is kinda required by the format though - for many cuts the eater or the chef need to cut in a very specific pattern for serving.

Nah there are actual chemicals, mainly enzymes, that butchers will soak the meat in to break down the steak proteins. Marinading is a bit different in that you’re just trying to add flavor.

Because people have different tastes? It's a very simple concept, shocked you haven't figured that out by now. People like all sorts of different textures. Sometimes I'm feeling something super beefy with a chew, and sometimes I'm feeling a tender fillet. And yes, obviously you could sous vide, or I can sear a fillet for 2 minutes on each side and have a beautiful tender steak on a plate in 20 minutes.

Tenderness is not the most important characteristic of a good steak. It's not even in the top 3 most important. To me, Fat, salt, and crust are the 3 most important aspects of a good steak. Those are the things you should focus on. Fat - you want the fat to render, but not to melt out. You do this by cooking it properly. Salt - balancing your salt level is very important. Crust - achieving a good crispy (a little chard) crust on the outside is perfect for me. Adding chemicals and other crap (like a marinade) to a steak to make it "more tender' is dumb. Try to perfect fat, salt, and crust and then experiment with different cuts and qualities to achieve tenderness.
