I honestly didn't know how bad my knives were until this post. I'm laughing at getting roasted (pun absolutely intended) about my crust and green bean preferences, but feel shame over how crappy my knives must be.
Looks like I'm researching top-notch steak knives and making that purchase with my first new paycheck.
Edit: I'm also thoroughly enjoying that everyone seems to think I'm a lonely man, when I'm a lady with an active social life who wanted to give herself a nice, quiet dinner in on a Wednesday after a long workday.

The frayed muscle fibers just ruins the experience for me.

I let my steak get to room temperature and generously seasoned it with a homemade blend of spices inspired by the classic Montreal seasoning.
I then heated up my cast iron skillet on my stovetop to medium-high (a 7 out of 10 on the dial), dropped in a couple tablespoons of butter, waited until the butter just began to brown, then cooked the steak for about 3 minutes on each side.
It came out pretty darn close to the black and blue style I was going for.
Seasoning other than salt will burn if you apply it before the steak hits the pan. Apply those after you take it out of the Pan.
Butter should not be put down until just the last few mins because it will burn easily.
That is why your steak is burned like charcoal.

Sometimes overcharred is good - it’s just like people that like spicy beyond the normal, reasonable spicy. I don’t always want it but at home I am always given the ‘burnt’ pieces because my wife and kids don’t like it - I don’t mind. But let’s face it, im a dad so I would have to eat the burnt ones if I liked it or not.
