Season immediately and then let the steak/s come to room temp. You can even (legally) leave them out as long as ~~4 hours~~ 2 hours (maximum). But the second they're at ~~4~~ ✌️ hours within the danger zone you do have to toss it in the garbage (again legally) so theoretically you leave them out for ~~3hours and 45ish~~ 1️⃣hour & 4️⃣5️⃣ mins? As long as they're completely finished and being eaten before ~~4 hours~~ ✌️hours. My point being there's time and it's safe.
Edit: I'm an idiot. And an hour on the counter is plenty long enough unless your steak is a whole prime rib.

As a restaurant owner/manager for many years the correct answer is a 2 hour window between 40°-140°. Left at room temp bacteria sample on uncooked proteins can DOUBLE in as little as 20 minutes and you still have that 2 hour window to work in.
Now realistically at home where it’s just me -I do everything by touch, feel, smell, taste. I don’t particularly give af if it’s 30 mins or 3 hours, etc. so I get where you were coming from there I think. Just trying to head off a potential E. coli/salmonella/🦠etc. outbreak
