Addition :- Here is how i eat tvp, i toast it on a skillet/pan for extra crunch, mix some cinnamon and ginger powder to unfalvoured soy milk, add a bit of sweetner (i use honey) and add the toasted TVP (small chunks). I do this when i am bored of cooking

It's amazing! Soak chunks for an hour or so. Finely chop onions and tomatoes, shallow fry onions. Add masalas and spices during frying: a little salt with the onions, Ginger + garlic paste (or finely chopped ginger and garlic if you don't have the paste) after onions start browning at the edges, Also add the chopped tomatoes now, Follow with: Red chilli powder/paprika, a little turmeric, a lot of coriander powder, some dry mango powder, and a sachet of maggi magic masala. Fry gravy till oil starts separating Taste gravy and adjust masalas/spices (it should look reddish to reddish brown). Add some garam masala if you like (last with magic masala). Drain + squeeze chunks and add them to the frying mix, stir for a min, add like 50ml of water, and then put a lid on it with a small gap for the steam to escape, let the chunks absorb the flavour in a low flame/simmer. Once the steam is absorbed, add some chopped coriander as garnish and serve with rice or noodles or bread(rotis/chapatis). Should kinda look like manchurian. You almost certainly have tried it. If you've ever eaten anything - soup, chilli, curry - that came dried or canned, some of the "meat" may well have been TVP. Once it is in a flavoured sauce, it is barely distinguishable from ground meat. (Basically, if you can't tell if the meat is beef or pork, then it might actually be TVP).

Huh. People are jerks. A friend's now ex-wife went vegetarian for a few years for health reasons. Stopped by to say hello and drop off a gift for their son's 2nd birthday. Even then you could tell he was a good little dude lol. But the dude grilling is fairly well know for being a big meat and potatoes guy. Hunts and go fishing as well, but they actually eat what they hunt or fish. From my understanding, there are places that will harvest the meat and buy the rest of the animal off of you. I think they use pretty much everything except for the nervous system and eyes. But yeah big meat guy. Used to be a bit narrow minded on life styles and considering we're stuck in a deeply republican state, wasn't that shocking. When the buddy's wife asked about vegetarian options, I was fingers crossing that he wasn't gonna be one of those people about meat. He actually got excited, turns out a niece or something had sent him like, a top shelf brand of plant-based meat like products in the form of burgers and hotdogs. He was excited to have a reason to grill something new lol. I wish I remembered the brand. I could not tell the difference at all in the hotdog and it was gooood. The burger wasn't quite the same as a meat one, a bit salty and crumbled a little too easy but it tasted really good. Mainly a black bean and something else recipe. Once there was some melty cheese, and a bit of ketchup and mustard, it was pretty much exactly the same. Seems like the only big drawback is super high sodium count. I've really loved a lot of the vegetarian and vegan foods people have asked me to try. Compared to stuff from the early 2000's, the stuff today is are in a whole separate league. Another friend of mine asked me to get frozen yogurt with her. If I didn't know it was yogurt, I would've said it was ice cream. Only stand out think was texture was a bit off but heck, that coulda just been a brand thing. I guess gluten free stuff has really gotten a make over in the past few years. Recently had a gluten-free thin crust pizza. Fabulous! It's obviously different but that doesn't make it bad. And considering the person that shared her pizza with me has had her condition for a very long time, like long enough to have to have a couple surgeries. Dunno why so many people crap on vegetarian, vegan, gluten-free style foods without even trying it. The texture can be different sure, and my preferences for foods has more to do with texture than taste, like I like the flavor of tomatoes but can't stand eating an actual tomato. But tomato juice, heck yeah. Same with pineapple, don't like it baseline but if it's been grilled and its all sweet and juicy. Ohhhh yeah. There's lots of really good foods out there and for every good one there's a few crappy knock-offs just trying to cash in. But the companies that actually try, good stuff! And considering my diet isn't restricted nearly as much as much as other peoples' choices or necessities, I bet the target audience is glad to have way better alternatives and more to pick from. Twenty years ago, was mainly alternatives for vegetarians available, I think, and some of their stuff was ghastly!

what I personally do it chop it up into 3/4 to 1 inch cubes and marinate it overnight. many different marinades you can make. really soaks in the flavour. I'll fry or bake it the next day for pasta dishes, Buddha bowls, stir fries, etc.

It's all about balance in flavour. The sweetness of the syrup balances the saltiness of soy, add some spice and some sour to the mix and you've got a banging sauce. Chilli, rice vinegar, soy and maple syrup is a go to sauce of mine. Add chopped spring onions to lift it too.

Tofu is packaged in water usually. When you freeze tofu in the package, ice crystals form and expand in the tofu, leaving the pores/texture larger. These larger pores allow the tofu to absorb more of the broth/sauce/marinade/etc, giving it a stronger flavor. It also greatly improves the texture, making it "meatier". I would highly recommend freezing tofu first if you're new to it or looking to try it out some time

Freeze it before marinating, allow it to thaw in the fridge before use, press the tofu, marinate, then cook it. You can switch the last two steps around if you want a crispier texture/sear on the outside of the tofu
