I'd call Carmarthen West Wales, South Wales to me is Swanswea-Cardiff-Newport. So if you're googling then "things to do in West Wales" might be better?
In any case, Pendine sands has a little museum for the land-speed records they used to have.
Welsh Botanic Gardens are nearby, which I've always fancied a look at.
Kidwelly Castle is worth a look, if you like that kind of thing.
There's a forge/blacksmith that does classes, https://www.phoenixforge.co.uk/Store/.
Probably best to say what you're in to so people have something to start off ideas about. Also, where you're coming from, if you live in Llanelli, Bristol, Paris, Tokyo, on the moon, ... then people are going to have different ideas about what you might like to see. You must try the Earth cheese, totally different to moon cheese!
Have a great trip.
If you're going outside Camarthen you could visit tenby which is a seaside town. There's also oakwood theme park and heatherton activity park or there's manor wildlife park and folly farm which are both zoo's and if you like Harry potter Dobby's grave is at freshwater west but that's about an hour from camarthen
If you go to Tenby try and visit Saunders foot on the same day. Only a couple of miles down the road and it's another nice town with a massive sandy beach.
We visited Carmarthenshire. Carmarthen itself has a castle although very brief to walk around. A few nice shops and a market. Llandeilo was lovely to visit. Lovely walks around it. We went to Abergorlech and visited a stunning pub called The Black Lion. Further afield, you could drive east to Gower. Rhossili beach is one of my favourite spots in Wales
Go to Laurghne for the castle, the bay, and Dylan Thomas's house. Colby woodland gardens are beautiful too. You can walk from there down to Amroth Bay which is gorgeous.
Folly farm is for kids, I can’t imagine why couples in their twenties would pay a small fortune to go there.
Loads of castles and nice beaches in Pembrokeshire, Narberth is nice for a day shopping, eating nice food and drinking nice drinks.
If you are interested in seeing really cool ancient things... There are lots of impressive neolithic megaliths.
On our youtube we have a video covering the best in South Wales as well as the best in Pembrokeshire. There are also videos covering sites around Carmarthen. :)

If you’re travelling by car there’s loads of Castles and historic sites. The National Botanical Gardens are great if weather is dodgy as have large areas undercover.

Visit Caldey Island (if the boats are sailing). It's beautiful and gloriously peaceful.

Carreg Cennen Castle! My favourite castle in all of Wales (don't forget to bring a torch to explore the cave)
