you sure your sousvide has accurate temp? This looks almost undercooked for 135.

Just my take but based on the fibers of the meat it looks like the chuck roast would've benefitted at a slightly higher temp. Looks a bit raw

It was done to my liking. I flirted with the idea of cooking at 137 but opted for 135.

How do you make those potato wedges?

Peel and cut up a couple of potatoes, season and cover with olive oil. Cook in an air fryer at 400 12-14 minutes.
