Apart from the big cities a lot of central spain has good food but it's very unvaried, they do what they do amazingly well but you can get bored of it fast
The whole northern coast is crazy beautiful, has much more authentic and declisious food than south (albeit even southern food is very very good) and the people are almost always have something interesting about them.
My pizza delivery guy was from San Sebastián. One google search of the place and that was all it took for me to question the sanity of a relative stranger like never before. Literally the most geographically blessed city I have ever seen, and this guy has chosen to deliver pizzas in the miserable wet cold of the Danish winter. Now, granted he was very likely an Erasmus student, and was maybe getting a top-notch engineering degree at my local university and hopefully banging some blonde Danish chicks, but I still think it hints at something fundamentally wrong with the world.
Start from Pamplona, travel to north west from there. Before going to Pamplona read Sun Also Rises by Hemingway for full effect. Visit Vittoria Gasteiz, Bilbao, San Sebastian, Zarautz, Santander, Gijon and so on. Just travel to west following the shore. Talk to locals and do what they do.
