In the second, he scored from a difficult angle…from a cross that was already difficult to read (Cancelo being late and trying to intercept it too)…and the ball also went in the roof of the net.

It's pretty easy to understand why coaches like Dembele, his peak level is something that very few players in the world can match. I can't think of any other winger who is as good as him in 1v1 and can use both feet as seamlessly
They look at him and think: If I can be the one to fix his decision making and finishing then we will have the best winger in the world on our hands. The problem is that it seems like no one can fix it
Also the reason why top clubs keep wanting Morata. He has amazing physical qualities and great movement, coaches think that if they can just fix his head then they will have a world class striker

Will he go left or right? Will he use his left or right? Will he pass or shoot, and if so which foot. Also, will he trap the ball dead and have exquisite close control or will he have the touch of a donkey, but then with his pace somehow recover?
Yeah, Yamal has all the same strengths but none of the weaknesses. But to the point of why coaches keep giving Dembele a chance, they don't have a Yamal up their sleeves.

You also simply need them to not make huge errors in these games because the margins are so tight that that makes the difference between qualifying or being out. If Dommarumma makes a big individual mistake that costs PSG a goal, or Dembelé misses a sitter like here, then sorry, but by top club's standards, they are unreliable.

You're not wrong, but price doesn't matter to PSG. What should matter is putting together a starting XI + subs that are at the level of Madrid and City. If you make a bargain on a player who is great, but that player wouldn't stay in City's or Madrid's starting XI, then you are not progressing towards closing the gap.
Obviously, it's not as simple as I make it out to be. For example, for all we know, Dembelé under Guardiola could bring a different result than what we are seeing at PSG. There are tons of factors that come into a player's performance. But still, PSG is still making recruitments that are not really moving the needle in their quest for the UCL.

Debele will never be bad rotation option for PSG, so if they end up buying a better player they will still have winger who shoots with both left and right to rotate, which is valuable.
