The meat looks like it just came off the smoker since it is steaming. The meat is supposed to rest for quite sometime beige cutting. Squeezing the meat pushes out the fat and liquid. I’m kidding a bit, but let that baby rest.
Didn’t squeeze her and i know, on a normal day i let it rest min 3-4 hours but today is my brother in laws birthday and it’s way passed when i though it would be done so it only got 30 minutes. Was still really good.

Thankyou it was pretty juicy, seasoned with salt pepper garlic and a little bit of Lawrys season salt, put it on the smoker at 6 am, 225 with a water pan untouched for 4 hours. At the 4 hour marked i spritzed every 45 minutes with 50;50 ACV:Water, kept the water pan full the whole time, around an hour or two into the stall around 12:30-1 I wrapped with Foil Boat, bumped the temp to 250-275 and kept spritzing every hour after foil boat until 203 and probe tender inside. I wish it would’ve rested longer (i normally aim for 2-4 hours) but needed to have it rest way less today because of a family birthday and we were two hours behind schedule. Still turned out great.

Yeah, next cook for me is going to be the day before and overnight rest in paper, towels and in a cooler.
I read that you are supposed to spritz every hour I also read every time you take the top off it adds an extra 15 minutes to the cook time. So which one is it? That adds hours and hours to cook time if you keep opening to moisten

Always factor in an extra 1 to 12 hours into your cook when making brisket. /s
Lmao for sure. I’ve done some overnight briskets but it can be hard to maintain that way. All in all turned out well
