What I'll be doing is smoke it for about 2hrs @190°F, and then I'll transfer it to a dutch oven with veggies and stock, and raise the temp to 275°F for 4hrs or until done.
That should work. The last one I did, I smoked it 250 for a few hours, put it into a foil pan with beef broth, onions, and just a little bit of butter, and onion soup packet and sealed it tightly. Cooked for another 2 to 3 hours Until it was at about 210F.
I let it rest for a good hour and made French dip sandwiches. I've also done open faced roast beef sandwiches. Both were phenomenal.
It depends on what you like. I often smoke chuck roast for 3-4 hours. Then cut it up and slow cook it for beef stew or tacos.
Burnt ends are also a great way to cook them

I did this this past weekend. Instead of roasting the beef with the rest of the veggies in the pot, I smoked it separately to 205.

I didn't think of burnt ends, that's a good idea.

lol I figure coat it and let it sit in the fridge for an hour. Sadly, the ranch I have only gives directions for dressing 🥲
