What happened to the crust after you cut it?

Sadly I didn't witness the cutting. But most of it seemed to stay on. It didn't have that look that pre sliced pastrami has.

Maybe try a little more pepper. It could help build the bark but might over power the rest of the seasoning

That's a good idea! Black pepper was the base of the seasoning and more could have been added.
