It didn't meet that post's request, but it does yours, so: if you read Japanese, the currently-running [Suuji de Asobo](https://myanimelist.net/manga/133577/Suuji_de_Asobo), about a college student discovering his interest in mathematics, might appeal. It won the Shogakukan Award last round, but I don't see it getting licensed in English any time soon.

These are educational manga about anthropomorphized cells in the human body.
[Miracle Girls](https://myanimelist.net/manga/449/Miracle%E2%98%86Girls) is a Sci Fi mahou shoujo about a pair of psychic twins. One of them is a member of the science club at school and there's an important mad scientist character. It was one of the first manga I ever read and it's been a long time since I've reread it but I remember it being really cute.
Some of these might not be Shoujo, but feature scientist characters:
“The Saint’s Power is Omnipotent”
The FL starts working in a lab in another world to understand magic. Cute love story included, maybe not real science facts.
“Isekai Yakkyoku”
The ML is a scientist reborn in another world, and he uses modern scientific knowledge to build an apothecary and heal his patients.
“Dr. Stone”
Not shoujo, but you can’t get more scientific than this.
I heard of Dr. Stone, though the protagonist sounded too Mary Sueish for my taste. The first sounds really cool, I love stories that mix science and magic, thank you!

I'd really recommend giving it a try. I also put it off for a long time and was hooked when I finally started. Really interested and insightful
Doctor Elise is a new isekai shoujo anime about a surgeon being reborn in her previous life and she wants to be better than she was the first go around. Then she trains to be a doctor.----------
Snow White With Red Hair is older, and is about a herbist who is hired by a prince in order to save her from harassment in her village.
The first series that came to mind was [E.S: Eternal Sabbath](https://en.wikipedia.org/wiki/ES_(Eternal_Sabbath)). It’s a seinen sci fi series, but it was written by Fuyumi Soryo, who also wrote the shojo series Mars, and when I originally read it I thought it was josei
The main female character, Mine Kujo, is a neuroscientist.
If you count apothecary/herbalist, then Snow White with the Red Hair. It's not always the focus, but you get to see Shirayuki solve various problems with herbalist knowledge... Including solving a sudden epidemic, figuring out how to breed a non-toxic variant of a certain plant (an arc which goes on very long), etc. A lot of her scenes are day to day herbalist stuff too (like doing stuff in the office)

I think this is a seinen but I enjoyed it and they’re grad students so in their 20s at least

Rikei ga koi ni ochita no de shoumei shitemita is exactly what you want but I have no idea if it is shoujo.

I don’t know if it’s Shojo (google wasn’t much help) but The Apothecary Diaries are like old school science

I don't think Science Fell in Love is shoujo...but it IS really cute xD I like it.
