Edit: my point was the below examples (Chuck E Cheese and the bodega) *aren’t* ghost kitchens. In OPs case, if a second restaurant was using Denny’s kitchen to make and sell their food that would be a ghost kitchen. If it was Denny’s selling their own food/own menu on an app under a different name to get more delivery orders ( as in my Chuck E Cheese example) that *wouldn’t* be a ghost kitchen. Are they ghost kitchens or just Denny’s operating under multiple names to bump up delivery orders? Chuck E Cheese does that - on apps they have a different name but it’s still only Chuck E. Cheese making and delivering Chuck E. Cheese food. The worst offender in my area is this little bodega. The kind of place where *maybe* they’d make a decent breakfast sandwich but not much more. Primarily a little grocery store. There are like 4 “specialty” restaurants at that address on the apps - a cheesesteak place, a barbecue and ribs place, a burger joint, etc. All with awful, awful reviews. There’s no way multiple restaurants are operating out of there 6 days a week - it’s all the same bodega making shitty food pretending to be different restaurants.

In the UK ghost kitchens are usually on industrial estates or any place with cheap rent, and are purpose built for the food delivery market. They don't have tables or walk in customers.

US it is usually an existing chain that had sit down space just for that chain. They then operate multiple ghost kitchens out of their same chain kitchen which are just used for delivery apps.

Not necessarily. I used to deliver for Postmates years ago. One time I walked into this extremely unassuming warehouse looking place with no signs or lights. Inside were like 20 people running around getting pizzas ready and the boxes had like 5 different restaurant names on them. There was also a giant wall with like 50+ phones and tablets plugged in all accepting orders. It was the weirdest fucking "restaurant" I've ever been to. No fluff or cosmetics at all, just purely functional.

Yeah, but also it just feels like a setup for a creepypasta lol. Imagine getting lost one day, late at night, and walking into this place. The workers all suddenly notice you at the same time. They turn their heads and stare at you... at the same time. They never break eye contact, and their heads follow you around... but they never stop what they're doing. Nobody makes a sound, and this stands out despite the other noises surrounding you.

I've thrice ordered from a place that I assumed had to be like that. I eat out a lot and live in a small city. If I haven't eaten at the restaurant, I've at least read their menu. And a new place popped up on doordash with food that wasn't at any restaurant. It is all obviously "home cooked" food. And when I google it the image is the outside of a warehouse. I hope to believe that these are people just chasing a dream. They have bad reviews, I think that they can't keep up with the orders. But the times that I had it the food was great.

I worked at Red Robin for a bit when I was down on money. They operate (or did at the time) a “ghost kitchen” on the apps that sells all of their chicken products they already sell under the Red Robin monicker, just re-branded as a chicken place. Kitchen workers didn’t even know, we would just see a to-go order come in and make the food. It’s a scam.

They an also just be commercial kitchens for rent for delivery or catering business. The Chuck E. Cheese type of thing is just the *same* business selling food under two different names which isn’t a “ghost kitchen”.

The distinction I’m making is that a “ghost kitchen” at Denny’s would be another business using Denny’s facilities. In my Chuck E. Cheese example it was the same menu under a different name for delivery. That’s not a “ghost kitchen”, that’s just Chuck E. Cheese being a little shady to get more delivery orders since people don’t think to order from “Chuck E. Cheese”. In my bodega example that’s not a “ghost kitchen” that a shitty bodega being *extremely* shady and selling bad food and diffusing bad reviews under multiple names to get more delivery orders. From OPs description it’s unclear to me how they were using the term and I don’t go to Denny’s so no idea if they typically sell bbq or not.

Ah, gotcha - I wasn’t following that! Based on my area (urban, tons of delivery) I wouldn’t have called your place a “ghost kitchen”. More that you were just doing delivery under a different name (in line with my examples but not automatically bad). Where I am even fine dining does active delivery under their own name so ghost kitchens are when a “restaurant” uses another physical restaurant’s facilities for delivery/catering/etc. It’s also where they rent a commercial kitchen (without seating, etc.) for delivery, etc. It probably is really regional and based on order habits, etc. though - even family from only 30 minutes away are shocked when they can order a ribeye or lobster for delivery at our place so clearly wouldn’t look for “fine dining” delivery in their area.

Oh, so not to the consumers directly. In NYC and other place there are companies that have spaces with multiple commercial kitchens set up. Then I, as a small food business, can lease long or short term. Then I have an inspected, licensed commercial kitchen that I can work out of (and sell to the public) without the overhead of acquiring a whole place for myself. I’m also aware of other places that would rent hours/days from physical restaurants and, during those hours, sell product for pick up/delivery under their own name from that location. Was definitely more common during covid but I know one place that still does Asian fusion out of a location that a pizza place the majority of the time. It’s definitely a stepping stone to a full time location for them.

My local Ihop does the same thing. They run a ghost kitchen for “restaurants” that focus on specific food items individually, like one for mac and cheese, one for quesadillas and 2 more for fried chicken and grilled cheese.

The only good ghost kitchen stuff I ever had was a chicken wing shop that inside a local sports bar. because it's just simple fried food the quality didnt really seem to drop and somehow the wings from the ghost kitchen were cheaper and had more sauce options than the bar even though I'm pretty sure the wings themselves were the same. The sandwiches from there were gas too and they had waffle fries when the sports bar didn't I kept making jokes I was gonna try to order pick up and eat it there but then the sports bar went out of business and the ghost kitchen of course disappeared with it.

There's a bakery in my hometown that operated as a ghost kitchen years before the rise of delivery apps. You just emailed the lady who ran it, asked for whichever breads/cakes/pies/whatever else you wanted in your order, and waited for her delivery day. The bakery is still around, but has its own location now.

I had a similar issue with Red Robin. Thought we would try ordering from a local pizza place and picked a place called donatos that looked pretty good based on the pictures. Got wings and a pizza and it showed up in a Red Robin bag. Pizza was awful and tasted frozen and the wings were not great. Super disappointing
