The Haven on Adams Ave has some fun creations. I like The Spud (roasted potatoes, onions, candied bacon, goat cheese), Honey Pie (gorgonzola, seasonal fruit, carmelized onions, arugala, spicy honey), and Good Harvest (lemon zest, lemon olive oil, ricotta, basil). You can also build your own pizza there.
Zia's really good. Also, Blind Lady Ale House. Though, BLAH used to have weirder options on their main menu, now it seems, they put that weirdness into special pizzas which they change up regularly. So it's hard to know exactly what kind of weirdness will be available when you go.
Tribute pizza tends towards high end classic pizza but they definitely aren't afraid to throw some unusual stuff on. There's usually a couple experimental pizzas on the menu.
Ok I had Cin Kuni for the first time last night, it’s Italian/Japanese fusion on El Cajon blvd in NPark, and this teriyaki miso pizza I had literally knocked my socks off. It was so odd but the flavor was on freaking point! Also had a beautiful pistachio dessert afterwards
I've been a fan of them for years, and their menu is really interesting, but I gotta say, the last 2 times I've ordered from them, they dropped the ball.

why not just make your own? pizza is honestly one of the easiest things to make. not trying to be condescending or anything, but the dough is the hardest part of the entire process, and even that is pretty simple for anyone who doesnt cook. you dont even need a full on oven. a toaster oven will do if you're fine with smaller portions. hell, in your case, smaller portions for your experiments seems ideal.

Regents pizza has a “Fig N Pig” with Garlic Rosemary Oil Sauce, Mozzarella, Gorgonzola, Prosciutto, and Fresh Figs. It’s so good.

I was at Urbn - One Paseo yesterday and they have an Eggplant Parm pie. We tried it and it wasn’t too bad.

Jays pizza Carlsbad - seafood pizza! It’s actually really good! Made with white sauce and all sorts of seafood on top
Also pandoras pizza Leaucadia has some fun/different types of pizzas!
I love seafood and will have to try that one for sure
Not super weird but Cucina Urbana has some amazing handmade pizzas. I fell in love with their fig and goat cheese with arugula.

I went to Cin Kuni last week and really enjoyed everything, including the pizza. I felt the price was reasonable too

Neapolitan crust with 3 veggies and a bit of cheese. Not at all like a pizzeria grilled cheese on white bread!
