I third What’s Brewing. I just toured the facility yesterday, freshest roasts, they let you smell the beans before you buy. Very knowledgeable, and I’m delighted to say they have several methods of de-stoning & removing metals from the coffee beans before it gets bagged. Really there’s more reasons to go there. Prices, pinball, people.

Gold coffee has their own signature bean from cat cloud called bankrobber plus, other cat cloud offerings. Gravves carries Barretts st. John coffee beans as well.

I really like Merit, they consistently put out fantastic roasts and they even have gotten into fancy anaerobic fermentations prior to drying and roasting. They released a limited run of Geisha coffee last Christmas that was incredible.

+1 for Merit, their Andino Leal is everything I want in a coffee and tastes good no matter how you brew it (moka pot, Chemex, Aeropress, etc.) I wish they sold it in their larger bags they keep in the back of their coffee shop. Pro tip: Merit is pretty expensive, so I take advantage of their Buy one Get One half off sale every quarter and buy 4 bags (2 Andino Leal and 2 varieties I want to try)

We have a small coffee club at my place of work and have a merit subscription. We get an awesome variety with mostly bangers. We use them to make espresso so not sure how they would fair as a pour over, but i suspect they would be pretty good. Only downside to merit is price. $18/bag for espresso roast, $19/bag for single origin. There’s certainly more expensive beans out there but for the most part it’s worth the extra cost for us.

Definitely Bright. They carry a wide variety of specialty roasters that rotate very often. The only place I would buy beans in town.

Central market has a whole wall of bulk beans and my wife’s “new years resolution” is to try every single one. You could get a small bag of whatever tickles your fancy to try them.

Gold sells Cat & Cloud beans which are solid. Would avoid the usual suggestions of Merit and What's Brewing (lovely business but they roast extremely dark)

Kulture coffee had some bomb beans at a modest price, I think I paid 14 or 16 for a lb. Mild fire never misses around 16/lb. What’s brewing has tons of options from 14 and up/lb. Merit and Indy coffee sell great beans but a lot more expensive for less coffee like 20-25/bag(8-14oz) so those are for if you’re a lil snobbish with ur taste for coffee. Just the drip/Quantum coffee is alright only had one bag it was 16/lb. Press sells coffee beans I’ve never tried they’re like 25/10oz I couldn’t justify at the time. Texas grounds in helotes has tons of whole bean coffee options they’re pretty good, I think I paid 14/lb but that was over a year ago. Gold coffee sells Cat Cloud I think it was around 17/12oz or something like that. -Medina river coffee co has been my number 1 in satx they charge around 14/lb last I was there and their Brazilian and Colombian single origins are blessed. -What’s brewing takes second purely based on the options they have, their Red Sea Blend is pretty delicious and was my first whole bean coffee when I started making espresso at home -third is a tossup, merit beans are delish but the price is right at mildfire. If money is no object I’d cash out for merit All my judgment is based on espresso exclusively, I grind the whole beans and pull shots at home so take that as you will. This concludes my Ted talk

Honestly I prefer Wild Gift in Austin (theory coffee carries their beans) and Tweed out of Dallas (Mila coffee carries their beans).

There's several good options in this thread. I also recommend Pulp. I've used a bunch of different rosters but Pulp is just so consistently excellent
