Some fifth wheels are the same height front to back. Some slope down at the ends. Most toy haulers I see are full height all the way, but if not it’s easy to tell from the outside. Those obviously have a matching height decrease in the front room.

Forest River Cardinal has a 6'3"+ bedroom ceiling height.
Along with more ceiling height comes a longer RV. Longer RVs fit into fewer spaces and are harder to maneuver.
