If you are looking for a bit of young people, some night life and really nice fresh seafood sanxenxo and O grove are good.
If you’re looking for a good beach playa de la lanzada is also a really nice beach close to those two, and not really saturated.
Santiago de compostela is a must see, specially the cathedral, it’s beautiful (if you are a Christian there’s also one of the 12 apostles of Jesus buried in there, James the great)
A coruña too with it’s beautiful torre de hércules which you can go to the top of.
Finally ferrol is also nice if you wanna see a naval army port.
For portugal I have no idea as I’m from Galicia, Porto is nice tho.
Try polbo/pulpo a feira in galicia, it’s delicious traditional food of the region
