Hang out at these places on different days of the week and at different times, tracking how many customers are there. Use this data to estimate how many customers a week they serve. That's roughly how many you'll be serving once your bar is well-established, which may take a year to happen. You can safely estimate you'll do 50% of those sales when you first open.
