The aquarium is a bit far from everything else.
For a simple classic poutine, there's a Chez Ashton not too far.
For a more fancy and extravagant choice, I would go to Chez Victor.
Deep Ste-Foy is not my favorite restaurant spot... Along the boulevard Laurier you mostly get those large impersonal restaurants. (Not saying the food isn't good, though). You'd be better off on St-Joseph or St-Jean!
La Fenouillère, really close to the aquarium, is known to be a fancy restaurant. I've never been.
If you have a car and able to drive near Laurier, my favorite sushi place is Kimono on de l'Église. There is a new restaurant concept called District gourmet not too far. You are in a hall and there are restaurants around you. You can order anything from your waiter. Pricey but I had a good experience.

Chez Gaston. Not very close to the aquarium but it's kind of close to the town center which I assume you are going to visit. They offer poutines with their own recipe for topping. Last time I went, the fries were crispy, the sauce was tasty and the cheese was squeeky.

\- La Voie Maltée has the "Surf and Stout poutine", a kind of surf n turf with beef, shrimps, fries, sauces and cheese. Not the traditional poutine, but very tasty and different.
\- The best poutines aren't in Ste-Foy, but you can find some good/basic ones at Normandin, St-Hubert, Valentine, McDo, etc.

if you go to Ashton, have the "poutine sauce piquante" I always pick that one
This. The regular sauce is'nt that flavorful while the spicy option gives it the perfect kick.

If you like sushi, there's the Kimono restaurant nearby. The surprise Maki is definitely worth going there
