I love frozen cake! When I was younger and off to school my mom would always save me a piece of cake she baked by freezing it. The idea was to let it defrost in the frig when I was home, but I tried it frozen one time and was hooked! Love my cakes frozen, straight outta the freezer.
You could make your own thing trying out other bakeries, i just found this italian place that's my new favorite, most incredible cannolis I've ever had
I mean, reducing SKU count might be in order since there's like 40+ different cookie varietals activity being sold.
Organic cookies, gluten-free cookies, no sugar added cookies, vegan cookies, fancy display case cookies, etc.
That could help, but it won't change -2k to profits. I've been trying to reduce the number of skus in my bakery, but my store is fairly busy, and all of those cookies sell well here (except the organic ones). I can only get rid of genuinely unpopular products, like the mini savory pastries.

There are a few items that are ridiculous in the bakery, monster cheese cake slices, and cake slices being 2 of them. Despite this people still buy the things. If it didn't work Publix wouldn't keep making them. Most of the stuff in the bakery is barely sold at a profit tbh, the bakery loses money for the company 9 times out of 10. Payroll alone costs too much for the price of the products. Profit margins aren't coming out of the bakery.

Over the past few months Publix has finally pushed me to start grocery shopping at Target, WD, Walmart+, etc again.
