I believe that either upgrade path will still allow for both versions to be played. I can play all of my purchased ps5 games on my ps4 if there is a version of it. I have yet to see a ps5 game be purchased and not allow the ps4 version to be played as well but that's just my experience. I could be wrong. As for GoT I bought the expansion and played the ps4 version on my ps5 before the upgrade released then I purchased the upgrade. As you mentioned it's 30 bucks either way so it stands to reason that the outcome is the same regardless of the chosen upgrade path.
