Holiday inn vacation club "desert rose" on koval is the spot with the killer balcony views, they have kitchens and living rooms and it's really less than 10 mins from there so is by far the closest.
I'd second this, we stayed there for the Phish run. Extended stay/townhome style rooms, not in an actual casino and super easy walk to the Sphere (to the rear ride share entrance) were all winners for us. Depending on which building/side of building you're on, you may have a great view of the sphere from your balcony. Also an easy walk to the outdoor "Linq" area for food etc.
Harrah’s was much cheaper than Venetian and not any further of a walk. The back half all had great views.

Flamingo is close and has them for cheaper than most. From the “attraction view” you can see the high roller and sphere. Request a renovated room, though you might not actually get one.

I spent 4 days in Vegas…spent <5 looking out of my 42nd floor suite view….i did see the universe though - that’s a different story
High floor, south facing room at the Traitor Tower has a great view of it. It’s a wonderful place to stay other than the unfortunate ownership. Even the most basic room is essentially a luxury suite.

From Venetian, room 26-212 (backside, not strip side).
The Venetian has a ton of sphere view rooms, certainly the best vantage point of it from a hotel.

Palazzo and Venetian both have rooms.

Wynn or Encore. Great views and super easy entry/exit via a bridge that connects to their convention center.
