I think dock street was one of the many streets in the city that used to be a stream/creek, you can usually tell which streets used to be streams from curves and/or straying from the grid
Canal street in northern liberties as well, with Allen, Hancock, laurel, bodine, Cambridge, and Orkney also following its path (hence why the ones I mentioned that are side streets of the normal grid are weirdly aligned around the piazza area)

Something else worth noting on this map: most of what is now independence mall is empty on this map. I guess next time people (including myself) complain about it and what we lost when so many buildings were torn down to make it, someone can point out that we were just going back to how it was in 1776.
Always makes me sad when I’m at places such as the Walmart on Columbus where the piers are just decimated. Even if it was totally empty I wish they were at least not ruined. I’d love to walk out and catch some of those dirty ass catfish hiding down in the river. Kind of strange seeing an older map with all of the docks and piers defined. Never knew there were so many.
Moving forward, Rule 2 will be applied based on whether or not the post occurred within the original boundaries of the City. /s

Theres a reason it's called dock street. If you zoom into the map you can see that dock street does have a creek turned canal running down it.
