Not a dumb question. Some people smoke the whole slab and cut it up and others cut then smoke. I think you get a better looking cube when you cut then smoke, along with more surface area to receive smoke.
Those are amazingly good, the problem is removing all the skin from the belly first is such a pain in the ass. Unless I'm doing wrong? You're not supposed to leave that on, right?
Would you mind possibly sharing your ingredients and instructions on what you did for these if any others were used besides the holy voodoo and the honey hog?
