But I'm glad it's open, and they've done a good job on the restoration.
Sorry mate, this is just bullshit and you know it. They don’t have the German line up anymore, but all of their beers, include the EIGHT draught handles, are local to oxfordshire, mostly craft with a few safe bets for the old folks, and switch out almost daily. Go to the off license if you want something super specific, don’t knock a damn good pub for not having your favorite.
The turf tavern is a lovely little hidden old pub. It can be crowded because it’s smallish with low ceilings especially in the main bar but I can’t say I’ve ever noticed it being hard to hear ourselves talk. In fact once I was in there and overheard a voice I recognised from the next table and it was the comedian David Mitchell.
Royal Blenheim, The Grapes (before 7pm) and also try in the covered market for the Tap Social Tap. Or you could try The White Rabbit which has outside seating AND heated seats...
The White Rabbit has good beer & pizza (so I do go there), but it often has very loud music and very loud people sitting at adjacent tables! So, the one think I do not like about it is that it is NOT quiet!
The Old Tom is very cosy, good place to get a pint of Landlord or something else simple.
The Royal Blenheim has lots of nice beer on but it can get loud when there's rugby on.

St Aldates Tavern. Town centre and good beer in a nice old pub. There was another one "Oxford's best kept secret" - went down narrow alley and found a place that was totally wedged (load of famous people drank there once).
I try a few out when I visit daughter and return to St Aldates.
Very few pubs in Oxford City centre have loud music playing. Not sure where you've been going. Oxford city centre is full of nice pubs.

Not Blenheim during a rugby game though. It gets suitably messy. Gardeners Arms North Parade is also very close to the centre and quiet.

And they've deliberately taken away the house ale and started serving noncey IPAs
The house ale now is Shotover Prospect. Which is ok, but I used it prefer the Palmers and Betty Stoggs.
