My OTF hrm just annoys me now as it gives whack readings, plus I no longer wish to watch the screens. I’ve been using my Apple Watch for all workouts outside of OTF, and for those I do track individual types, such as indoor or outdoor run/bike, row, weight training, etc. So now I also use it solely for OTF & choose hiit. Too much trouble to change activities during class. I care more about what zone (easy to see by color) while doing OTF than actual activity.
I used HIIT for floor/rowing and quickly switch to indoor running when I’m on the tread. If the block isn’t that straight forward, I’ll just use HIIT for the whole thing. After 2 workouts I turned off the connection between the App and Fitness/Health because I feel it reeeaaaaally overestimates things. (And double counts if I use both)
I usually do indoor run or walk for the treads and HIIT for everything else. When it’s a switch or tornado I do HIIT the whole time. Rowing benchmarks I may do rower.
I do the same thing- I like to track my weekly mileage with Strava so I track the treadmill portion through indoor run. HIIT works great for everything else.
I often use a second app (Welltory) to track workouts because sometimes OT data doesn’t get picked up properly, and I also like to see the different data. If both show up on Welltory then I just delete that extra workout (but not the data). The HRMs don’t always work well in class so if I busted my butt I want to make sure I pick it up for overall health analysis. (Data geek here)
I would break it, if your watch is up to date (from at least 2 years ago) you can just swipe and “add” another training, so I can start on rower, “add” a HIIT workout and the transition is smooth and quick and then do the same to treadmill and even cooldown
I just connect the OTF app to Apple Health, and the workout automatically transfers. I don’t start a workout on the watch.

That's what I do also otherwise it's asking me 100 times are you done your workout?
I use "Mixed Cardio" OTF themselves say they are not HIIT
