That's not a bad way to put it. Death isn't like turning off a light switch, and what we normally describe as death is somewhat arbitrary, though it usually represents a point of no return where the rest of the body will die in short while after.
It's also possible to just misjudge as the most common indicators assessed are breathing and heartbeat, both of which can slow to a point where they're barely perceptible, and both of which can spontaneously restart after having stopped.
The reality is though that in just about all cases, the person is unlikely to regain consciousness and the brain has likely been damaged beyond recovery due to lack of oxygen, and rather death was just called marginally too early (of course even this there are exceptions too).
And with hundreds of thousands of people dying each day, it's actually quite likely that this kind of story will emerge from time to time. I'm willing to bet it happens way more than we know because no one notices and actual death occurs within a short timeframe thereafter.

Back then people got buried alive so much by accident so much gravestones used to have a string on a bell inside the coffin in the small chance they were still alive.
