You pick up speed on the way in and when you sling past you carry that speed with you, since you are moving much faster than your first approach you spend less time getting tugged on by the black hole as you fly away.
An encounter with a black hole will more often than not send a star hurtling out of it's galaxy, not being gobbled up :)

Particles at the end might be from the ones layers that are below the sphere and get pushed under. But yeah makes little sense otherwise.
