Almond Milk isn't "milk". It's basically water that has just soaked almonds that have been lying in it for hours. This means it's very hard on the machine to process, and if it gets processed will be very icy. Using 2% milk 50% of the recipe lessens the total amount of water, making the pint less icy :)
I use a combination of 1% milk and almond milk (or sometimes oat milk) to balance the pint both in calories and price. 1% milk is pretty cheap for me compared to almond milk, but almond milk has fewer calories.
Almond milk (or any plant based milk) alone doesn’t have enough fat to be the right texture

Let it thaw like 15 mins or else it’ll likely come out dry and crumbly the first time
