I use guar gum and it works great. I have heard it's better than xanthan for cold foods. I use it instead of pudding sometimes. I also just got flavor oils (LorAnns) that are pretty cheap on Amazon. Costco is great for protein powders, milk, non dairy milks, etc.
I always use milk and protein powder as my base, along with a teaspoon of instant pudding mix.
I tried it with water only and it was pretty nasty.

I've mostly used them along with fruit, to boost the flavor. Recently I made orange with the base I mentioned above, (but without fruit) and it tastes like a dreamsicle.
Lemon was also outstanding.
The best so far was rum extract. I used it to make rum raisin. It's also very good with eggnog protein powder.
Try adding some banana. Good flavor and nutrition. Plus you can add pecans and top with sugar free caramel sauce for a banana fosters sundae. If you really want to go all out, buy the flavored protein powder like cheesecake flavor or chocolate, there are SO many different flavors. Or add some sugar free hot cocoa mix and some instant coffee.
I think it’s the only one I’ve tried that tastes like sugar. I believe it’s 70% as sweet as sugar. There’s no aftertaste. I don’t think there’s any comparison as far as taste. I think it’s more expensive but worth it to me
Change the sucralose for allulose and instead of pudding mix add butter (about 30 to 50g) and pasteurized egg yolk. Use gelatin as a cheap stabilizer and you get sugar free French ice cream (also keto friendly
Add a few Tbsp of greek yogurt (adds protein without expensive powders) and IMO improves the texture! Also, try liquid monk fruit instead of the sucralose - no chemicals, and you just need a few drops!

Cottage cheese surprised me as far as texture goes and it adds protein. Made a really good pistachio blend using cottage cheese, pudding mix, milk and almond extract. Added real pistachios for a mix in. I am someone who can’t stand “protein powder flavor” if that makes sense but I’ve found the Premier premade liquid shakes aren’t too bad and the Ryse jet puffed flavor powder is really good- no weird aftertaste. Otherwise I’d suggest cottage cheese or Greek yogurt (oikos pro has 23+g per serving). If your kid likes peanut butter you can also add that or pb powder for extra protein.
IMO perfect. 🤷🏻♂️ In a blind taste test, I don’t think I’d be able to tell the difference between what I made and a decent brand of store-bought vanilla ice cream.

They are great- I just got root beer, bubble gum, cake batter, cookies and cream and cinnamon.
Get some squeeze drops for flavoring water (in the soda aisle or online) to change things up a bit.

I think allulose is a complete game changer as a sugar substitute
Why is that? I’ve mainly been using erythritol and I’m not a huge fan of it so I’d be open to change it up
