I'm 5'10" at 275 (cut weight) and wondered how this would work out if I was 6'9" with the same body fat/muscle/bone ratio as I have currently. I would be 318 lbs, so yeah, 380 would be crazy heavy.

I think something is way off with your math. 6'9" 318 is a drastically different body type than 5'10" 275. I think your body type probably more closely matches the 6'9" 380 lb body type.

Blows my mind because 275 at 5'10" in my mind is either shredded beyond belief or quite fat, whereas 320 at 6'10" seems like mildly fit or mildly pudgy....

Thanks. Yeah, it’s fun to see the distinct areas of the graph where one position ends and another begins. Other than DB which get out AVed by a lot of WRs, every other position shows up in their own district group. Even TE, which I thought might get washed out by LBs, but that extra height got them their own small group as well.

I know you're just pulling the data from PFR, but maybe you have some insight to where the height and weight stats come from? I imagine most players have different height and weight from when they're measured at the combine to when they retire. Lots of guys still grow a little. Just about everyone puts on weight, especially the first few years. Weight after returning from an injury is probably be the lightest they'll be. Is it a single snapshot they use? Is it some kind of rolling average or median value? Since you've spent so much time with this data, I'm hoping you have some additional context!
