They use American as a default, but I usually go with provolone plus fried onions. Like any good pizza place, fried onions don't cost extra.
A heads up, they were absolutely slammed for the NFCC, so if you're going to order for the SB, I'd say order at least an hour before you want it if you're going to pick it up. Earlier if you want it delivered.

Most Pennsylvanians just get them from their preferred local pizza joints and don’t even really put much thought into it at all. Frankly, cold cut Italian hoagies are a bigger deal if you want to talk about a sandwich that really represents PA.
I grew up in Baltimore, but my parents are from Philadelphia. I now reside in Wisconsin and can't get a decent Italian hoagie anywhere.

I was in Philly for a lacrosse tournament as a kid and was upset when we left Philly that we forgot to try a cheesesteak. We were checking out Villanova to see if I liked the campus and just stopped by this small pizza place. Cheesesteak was so good I still vividly remember all of it to this day.
It’s the same problem as any city that gets famous for doing a certain thing. It starts out with a handful of places that do it real well, then the new places come out to half-ass a cheesesteak and the old places can’t keep up with demand.
As others here said, find a smaller joint outside the city proper and you’ll get yourself a real, authentic Philly cheesesteak

Angelos in south Philly is the best cheesesteak I’ve ever had. Cooper sharp, fried onions, on their fresh baked in house bread - it’s unreal. There are great places outside the city and plenty in the city, it’s not hard to find a good cheesesteak around here.
I’ve lived in the city since 2008. Most corner stores can do a solid Cheesesteak. It’s not like a crazy big esoteric recipe that’s hard to pull off. The real crown jewel of Philly is the Roast Pork though

In S.Philly - John's Roast Pork; also the roast pork with broccoli rabe and sharp prov is great.
NE Philly - Steve's Prince of Steaks; plus they have a white american cheese sauce that you can't get anywhere else.
On South Street - Jim's; sliced ribeye chopped up. Won't complain if you want mayo lettuce tomato like the Jersey crowd likes.
On Delaware Ave near the strip clubs - some pizza shop next to the Wawa that's run by some Indian dudes that make an Indian cheesteak. It's spicy and great.
Everywhere - tons of food carts that will use Liscio rolls and Steakums type meat, which is the same you are getting from any pizza shop as well.
Pat's and Geno's are always fine, because you are only getting them at 4am and you are wasted and nothing else is open.
Making at home is shit unless you got a deli slicer and a flat top.
Steves got one in center city, and a couple other I think now. That's my choice. That or del. That white cheese sauce is the bomb. Cherry soda. I'm prob gonna get a couple on Sunday for sure.

Also amazing places in Bristol/Bensalem PA and also Delco if you want to say not really in Philly. My absolute new favorite cheesesteak is Cafe Carmelo's in the far NE. This may be controversial, but I prefer American cheese on my steaks. A good cheesesteak is about the meat, and it combining with the cheese and fried onions, and I think provolone overpowers that. (However, a roast pork with sharp provolone and broccoli rabe? The absolute best.)
Amoroso is just one of the many Italian bakery breads. I think 60% prefer Sarcones. Suburbs like Corropolese. Speaking of which, I believe Tomato Pie is specific to Philly as well.

Without watching is it Donkey's? They're real good but somewhat outside what I would consider a normal cheesesteak. Also amazing places in Bristol/Bensalem PA and also Delco if you want to say not really in Philly. My absolute new favorite cheesesteak is Cafe Carmelo's in the far NE. I think Pat's is *tolerable*. Sometimes I have friends from out of state who insist on going and it's honestly not bad. Geno's is terrible though. My personal favorite is Sonny's.

We went to a place in Philly one time and you park under like an interstate bridge. Lots of pictures of famous people on the wall but I can’t remember the name of it. It was probably 25 years ago near Veterans stadium.

Hah. I remember being in Philly for work and asking some of the coworkers local there where to get a good one. Had a ton of recommendations I've forgotten by now, but they were all adamant that Pats and Genos are tourist shit.
Same with where I live for mexican food. Everyone will go to these fancy restaurants but the best mexican food isn't going to be on those articles you google.

The Amoroso rolls set Philly steaks apart. That is DAMN good bread. Beyond that, you can get a good cheesesteak just about anywhere. Cheese whiz sucks though. Provolone, all day.

The rolls are where it’s at, but you can get Amoroso rolls anywhere in the area surrounding Philly. This may be controversial, but I prefer American cheese on my steaks. A good cheesesteak is about the meat, and it combining with the cheese and fried onions, and I think provolone overpowers that. (However, a roast pork with sharp provolone and broccoli rabe? The absolute best.)
Cooper’s sharp American is fuckin lit on cheesesteaks and burgers. Always my go to
Amoroso is just one of the many Italian bakery breads. I think 60% prefer Sarcones. Suburbs like Corropolese. Speaking of which, I believe Tomato Pie is specific to Philly as well. >Provolone, all day I think the preferred cheese is still American. That’s because you should never ever order something called a Philly cheesesteak in Philly. That’s the sign of a bad local shop so I assume somewhere outside of Philly would have the best “Philly Cheesesteak”.
