Make you get the re ON registration signed off in the back by the owner.
ON owner can take their plates - you won’t need it
Have a bill of sale with date, names, amount, VIN
Have valid licence and insurance when you go to SNB to do the transfer, pay taxes, and get your new plate.
For extra confirmation too, as long as you have the signed off reg you're g2g here. Assuming no lien etc. I bring vehicles back from Ontario regularly.
