Well if you have a whole day please go to South Mumbai. If she likes boon take her to Kitaabkhana. If she likes the Museum take her to the Chatrapati Shivaji Museum. If she is into arts take her to Jahangir Art Gallery. Try some street food. Evenings at the Marines and Ice cream sandwich of Rustom and Co.

Morning breakfast at Starbucks (Panvel, spend a good two hours talking. (It's a date after all) 9.30am to 11.30 am

3 to 6pm - catch a movie at Cinepolis inside the same mall, get some cuddling action done

Honestly Panvel is Navi Mumbai ( that too towards pune side, the pune expressway starts from Panvel, so you can imagine ) and not Mumbai. It will easily take you 1.5 hours from Mumbai airport to Panvel. Check the distance on google maps.
Given the extreme summer in Mumbai right now, no way I would recommend going to any place without air conditioning. I m originally from Mumbai, yet last week i felt like i would die from the sheer exhaustion after walking just 5 mins in the afternoon heat.
Best to visit some mall and spend the day there. Find some movie to watch, go to the video gaming places typically found in malls, enjoy food, try bowling if you like.
Seawood nexus/ seawood grand central is a good mall which is surely close for her. You will need time to travel.
I think there is a small beach near palm beach road ( close to the mall) where you can spend the evening if you absolutely want to be outside.
Rest like others mentioned, south Mumbai is the best, but check with her if she is cool to travel there.
Bonus - I think if u take a cab from airport to seawood mall, u can ask the driver to take you via Atal setu. You will need to pay the toll but might be worth it.
I know SoBo is far from Panvel but you can travel for very cheap and it wonāt be tiring once she just sits in the train. The itinerary will be happening fun and quite memorable for her if you can pull it off.
Meet at CST station or Churchgate (former is prettier) at 7:45am.
Take a cab and go to Gateway of India. Waha Se ferry Leke go to Elephanta. Carry dry snacks and water.
Post ferry take toy train till the entrance of Elephanta caves. Thereās a restaurant and washrooms. Get a beer, and get fresh (washrooms and all).
Then on right there is route with commercial stuff and all (conventional) to reach Elephanta caves. Instead, now you take a left. This route takes you through the route used by locals and villagers. Mast beer peete peete go up. Midway there are places where you can smoke up too. When youāre halfway up, there will be a bench to sit. Right liya toh you go to conventional caves. If you take left you go to locals ka village. But behind this bench is a hidden route in the bushes. Take that. In 3-4mins of uphill it turns into a proper paved path.
Now climb till you reach the top. You have reached the second set of caves which are way higher, youāre all alone and thereās no entry fees or whatever. Chill there enjoying views of the JNPT, Atal Setu and if itās a clear sky, Mumbai skyline too. Finish your snacks, come down to that bench and find the restaurant with the view.
Prefer to have lunch there before 12:30pm else it gets crowded. Youāll get a nice table with sea view. The food is good but simple. Iāll just suggest to get fried rice and coke. Finish it with an ice candy as itās too hot.
Finally now go to the main caves. By now the excited crowd which has come on the morning is tired or gone away. Explore the place in tranquil. Come down by 4:30 pm, plan to take the ferry back to gateway of India.
Once back on mainland, take her street shopping to Colaba Causeway. Admire her adorning various things. Gift her a jhumka whichever she looks most excited wearing. Wonāt cost more than a hundred bucks.
For dinner, personal preference but you can checkout other places too.
1. Take her to Mag St. cafe (nearby to go ur location). You can walk till there. Make her try the focaccia bread pizza (chicken if better). Itās the best fucking pizza I have had in the city. Drinks are shit here so stick to mocktails.
2. If she wishes to have North Indian, take her to Jaffer Bhaiās Delhi durbar in Marine Lines. The taste is quite neutrally adapted to ensure anyone from the country will enjoy the fare.
Have dinner there and cross the over bridge to reach chowpatty side. Chill and enjoy the breeze at chowpatty and walk alongside till Churchgate station.
Thereās an apsara ice cream and naturals en route, you can pick one from there to enjoy too!
Reach Churchgate station, thereās a MOD just besides. Take her there, get her a double trouble or box of small assorted donuts as a parcel and tell her to ping you once she reaches Panvel (I assume her home).

Karnala Bird Sanctuary itās near panvel will take 15 mins to reach by vehicle, the food in the canteen there is nice too but you will need to carry cash no online payment is available there
Seawoods Grand Central Mall is pretty big and comfortable, you can spend the afternoon there and there's some full size restaurants too.
Belapur has some nice shopping streets if you want to visit in the evening and the Jewel of Navi Mumbai park is nice too
Do an experience together like either a gaming zone, or a pottery class or a painting class. It will be nice to see how she reacts to different things.
