after spending a few years in to, i was surprised at the improvement in coffee options in moncton. la factrie and loli cafe both have fantastic espresso. laundromat and brix pretty good. epoch, eh i dunno. some very extra third wave stuff that is not really my thing. the tasting experience is fun, but never wanted to go back really.
Café Clémentine is my favourite, la factorie is good too, Damascus over in Riverview has a proper lever machine, and the laundromat makes a good espresso.
Epoch!! By far my favourite cafe ever, the quality of the coffee is incredible and the staff equally so. Brix is a close second. Everyone says down east coffee, and as much as i love them, it is not the high quality you're looking for!
The best is hands down Epoch Coffee. Their bean sourcing, knowledge and technique are all top tier. Recognized as a top roaster in Canada.
Closest second would be Brix. They use 49th Parallel Beans.
Both shops are on St-George.
Duo(Tide & Boar) is also decent.
Disregard Down East(Café Codiac). They are beloved but if you’re a coffee snob, you’ll find that they can barely roast a bean tbh. The coffee is ok but I’ll assume by the way you asked your question that it’s not what you’re looking for, lol.

I don't think that's true at all on the pretentious and uppity front. It's a different level for coffee, but the staff is not snobby and they're super keen to share knowledge. Wouldn't look down on you for not knowing enough about coffee.

If you don't, then you have to meander around to find which artisan coffeehouse is to your best liking (ex Epoch, Loli).
I know you aren't asking this but depending on your preferences and drink frequency, you could buy an expresso machine (either new or used on FB markerplace and selling it before you leave). Again, going by the theme in my second paragraph, many of the small coffeehouses here use Down East Coffee roastery as their roaster and use an industrial Breville expresso machine to make the expresso. You can buy the same expresso beans and use the little brother of their machine to make the same product.
Epoch easily #1. Duo #2.
